  • 4 bone-in lamb chops (about 1 inch thick)
  • 2 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • 1/2 cup fresh pomegranate seeds
  • 1 tsp ground cinnamon
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp Dijon mustard
  • 1 tbsp honey

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a sheet pan with nonstick spray or olive oil.
  2. In a bowl, mix olive oil, Dijon mustard, honey, minced garlic, ground cinnamon, cumin, salt, and pepper until well combined.
  3. Marinate the lamb chops in a zip-top bag with half of the marinade for at least 30 minutes (up to 1 hour).
  4. Arrange the marinated lamb chops on the sheet pan and drizzle with remaining marinade.
  5. Roast in the oven for about 20-25 minutes or until desired doneness is reached.
  6. Sprinkle fresh pomegranate seeds over the lamb just before removing from the oven. Serve immediately.
