Instructions

  1. Preheat oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a bowl, combine diced turkey breast with olive oil, garlic, rosemary, thyme, salt, and pepper until evenly coated.
  3. In another bowl, toss sliced carrots, bell peppers, and zucchini with olive oil, salt, and pepper until well coated.
  4. Arrange seasoned turkey on one side of the pan and veggies on the other side.
  5. Roast for 25-30 minutes or until turkey reaches an internal temperature of 165°F (74°C).
  6. Allow to cool slightly before serving; drizzle with additional olive oil or balsamic glaze if desired.
