  • 1 whole branzino (approximately 2 lbs), cleaned
  • 1 cup Kalamata olives, pitted
  • 1 cup green olives, pitted
  • 3 tbsp capers, rinsed
  • 1 lemon, sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh oregano, chopped
  • 4 garlic cloves, minced
  • 4 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse the branzino under cold water and pat dry. Score both sides of the fish with diagonal slashes for even cooking.
  3. Rub olive oil over the fish inside and out; season generously with salt and pepper. Stuff the cavity with lemon slices, garlic, and herbs.
  4. Place the branzino on one side of the prepared baking sheet; scatter olives and capers around it. Drizzle everything with more olive oil and top with additional lemon slices.
  5. Roast in the preheated oven for 25-30 minutes or until the fish flakes easily when poked with a fork.
  6. Serve immediately, drizzling any remaining juices over the fish.
