  • 14 oz firm tofu, pressed and cubed
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 3 tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • 1 tbsp toasted sesame seeds (for garnish)
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Press tofu for at least 15 minutes to remove excess moisture. Cut into bite-sized cubes.
  3. In a large bowl, combine cubed tofu, bell peppers, broccoli, olive oil, soy sauce, garlic powder, and salt. Toss until well coated.
  4. Spread the mixture evenly on a lined baking sheet with space between each piece.
  5. Roast in the preheated oven for 25-30 minutes, tossing halfway through until golden brown.
  6. Serve hot, garnished with toasted sesame seeds.
