  • 4 lamb shanks (about 2 lbs)
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 cup red wine
  • 2 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season lamb shanks with salt and pepper. Sear until browned on all sides (4-5 minutes per side). Remove from skillet.
  2. In the same skillet, sauté onion and garlic until translucent (3-4 minutes).
  3. Deglaze with red wine, scraping up any browned bits; let simmer for 5 minutes.
  4. Stir in beef broth, tomato paste, rosemary, and thyme until combined.
  5. Transfer everything to a slow cooker or Dutch oven. Add shanks back into the mixture. Cover and cook on low for 6-8 hours until tender.
  6. Serve shanks drizzled with sauce over mashed potatoes or crusty bread.
