  • 2 racks pork ribs (baby back or spare)
  • 1 cup BBQ sauce (store-bought or homemade)
  • 1/4 cup brown sugar
  • 2 tbsp paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup apple juice (or apple cider vinegar)
  • 2 cups hickory or mesquite wood chips (soaked in water)

Instructions

  1. Prepare the ribs by removing the membrane from the back for tenderness.
  2. In a bowl, mix brown sugar, paprika, garlic powder, onion powder, salt, and pepper. Apply generously to the ribs and let sit for at least an hour (or overnight).
  3. Preheat your smoker to 225°F (107°C) and add soaked wood chips.
  4. Place seasoned ribs bone-side down in the smoker. Smoke for about 5-6 hours until internal temperature reaches around 190°F (88°C).
  5. During the last hour, brush on BBQ sauce and allow it to caramelize.
  6. Let the ribs rest for ten minutes before slicing and serving with extra sauce.
