Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until crumbly.
  3. Stir in the egg yolk and gradually add cold water until the dough forms. Shape into a disc, wrap in plastic, and chill for 30 minutes.
  4. While chilling, sauté sliced pears with sugar, cinnamon, and nutmeg in a skillet over medium heat until slightly softened (about 5 minutes).
  5. Roll out the dough on a floured surface to fit your tart pan. Place it in the pan and trim edges.
  6. Arrange sautéed pears inside the crust; brush edges with whisked egg mixed with water.
  7. Bake for 35-40 minutes or until golden brown. Allow to cool slightly before serving.
