  • 2 tbsp low-sodium soy sauce

  • 1 tsp red chili flakes (adjust to taste)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the eggplants into half-moons about 1 inch thick. Optionally, score them lightly for better flavor absorption.
  3. In a bowl, whisk together miso paste, soy sauce, sesame oil, red chili flakes, and minced garlic until smooth.
  4. Spread the eggplant slices on the baking sheet and drizzle the sauce over them. Toss until evenly coated.
