  • 1 cup crumbled feta cheese

  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant, about 3 minutes.
  3. Add spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat.
  4. In a bowl, mix the sautéed spinach with crumbled feta until combined.
  5. Roll out the puff pastry on a floured surface and cut into squares (4 inches).
  6. Place a spoonful of the filling in the center of each square. Fold diagonally and seal edges with a fork.
  7. Beat the egg with a tablespoon of water for an egg wash and brush over each pastry.
  8. Bake on a parchment-lined baking sheet for 15-20 minutes or until golden brown.
