  • 1 cup salsa verde

Instructions

  1. Cut the beef chuck roast into large chunks. In a heavy pot, heat oil over medium-high heat and sear the beef until browned on all sides.
  2. Remove the beef and sauté chopped onions and minced garlic in the same pot until fragrant.
  3. Return the beef to the pot, add enough beef broth to cover it, bring to a boil, then reduce heat and simmer for about 2 hours until tender.
