  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. Cook the rice according to package instructions; set aside.
  3. In a skillet over medium heat, sauté onions in olive oil until translucent (about 5 minutes). Add diced bell peppers and cook for another 5 minutes.
  4. Add ground beef to the skillet; cook until browned and no longer pink. Drain excess grease if necessary.
  5. Mix in cooked rice and diced tomatoes; season with salt and pepper. Combine well.
  6. Pour half of the mixture into the baking dish, layer with half of the cheese, add remaining mixture, and top with leftover cheese.
  7. Bake uncovered for 30-35 minutes until bubbly and golden brown. Serve hot.
