  • 8 oz halloumi cheese, sliced into ½-inch thick pieces
  • 3 tbsp hot honey
  • 2 cups mixed greens (arugula and spinach)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • ½ small red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat grill or stovetop grill pan over medium heat. Brush grates with olive oil.
  2. Grill halloumi slices for 2-3 minutes on each side until golden brown.
  3. In a large bowl, layer mixed greens, followed by grilled halloumi, cherry tomatoes, cucumber, and red onion.
  4. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl. Drizzle over assembled salad.
  5. Just before serving, generously drizzle hot honey over the top.
