  • 2 (15 oz) cans navy beans, drained and rinsed
  • 1/2 cup brown sugar
  • 1/2 cup apple cider vinegar
  • 4 slices bacon, chopped (or turkey bacon)
  • 1 medium onion, finely chopped
  • 1/2 cup ketchup
  • 2 tbsp mustard (yellow or Dijon)
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. In a skillet over medium heat, cook chopped bacon until crispy. Remove bacon and drain on paper towels, keeping the grease.
  3. 3. Sauté finely chopped onion in the reserved bacon grease until soft.
  4. 4. In a large bowl, combine navy beans, crispy bacon bits, sautéed onion, ketchup, mustard, brown sugar, apple cider vinegar, salt, and pepper. Mix well.
  5. 5. Transfer the mixture to a baking dish and cover with foil. Bake for about 30 minutes; remove foil in the last 10 minutes for caramelization.
  6. 6. Let cool slightly before serving.
