  • 9 lasagna noodles (no-boil)
  • 3 cups ripe tomatoes, chopped
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, then add tomatoes and simmer until saucy. Season with salt, pepper, and basil.
  3. In a bowl, mix ricotta cheese with salt, pepper, and remaining basil.
  4. In a baking dish, layer tomato sauce at the bottom, followed by noodles, ricotta mix, mozzarella, and more sauce. Repeat layers two more times.
  5. Top with remaining noodles and sauce; sprinkle with Parmesan.
  6. Cover with foil and bake for 30 minutes; uncover and bake an additional 15-20 minutes until golden brown.
