Turkey Bolognese is a healthy and delicious twist on the classic Italian sauce.   • 2 tbsp extra virgin olive oil
  • 1 medium onion, finely chopped
  • 1 medium carrot, shredded
  • 1 stalk celery, finely diced
  • 3 cloves garlic, minced
  • 28 oz canned whole peeled tomatoes (crushed)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion, carrot, and celery; sauté for about 5 minutes until softened.
  2. Stir in minced garlic and ground turkey. Cook until turkey is browned, breaking it up with a wooden spoon (about 7 minutes).
  3. Add crushed tomatoes and Italian seasoning; mix well. Simmer on low heat for at least 30 minutes to blend flavors.
  4. Season with salt, pepper, and balsamic vinegar to taste; simmer for an additional few minutes.
  5. Serve over pasta or zoodles and garnish with Parmesan cheese if desired.
