  • 1 tsp baking powder

  • 2 large eggs

Instructions

  1. In a food processor, blend chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and pepper until mixed but slightly chunky.
  2. Shape the mixture into small patties or balls (about 2 inches wide).
  3. Preheat your waffle iron according to the manufacturer’s instructions.
  4. Prepare the waffle batter as per package instructions; add eggs for richness.
  5. Spray the waffle iron with non-stick spray. Pour half of the batter onto the iron; place falafel on top and cover with remaining batter. Cook until golden brown (about 5 minutes).
