  • 2 tsp active dry yeast (7g)
  • 1/2 cup unsalted butter (113g), melted
  • 1 cup whole milk (240ml), lukewarm
  • 1 tbsp sugar (12g)
  • 1 tsp salt

Instructions

  1. Boil the peeled and chopped potatoes in salted water until fork-tender (approximately 15 minutes). Drain and mash until smooth; allow to cool slightly.
  2. In a small bowl, mix lukewarm milk, sugar, and yeast. Let sit for 5 minutes until foamy.
  3. In a large mixing bowl, combine mashed potatoes with melted butter and salt. Gradually add the activated yeast mixture and flour to form a soft dough.
  4. Knead on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover with a towel, and let rise in a warm place for about 1 hour or until doubled in size.
  5. Punch down the dough, divide into golf ball-sized portions, and arrange on a greased baking sheet. Let rise again for about 30 minutes while preheating the oven to 375°F (190°C).
  6. Bake for 20-25 minutes until golden brown. Serve warm with butter.
