  • 2 lbs beef chuck roast, cut into bite-sized cubes
  • 1 cup jasmine rice
  • 1/4 cup low-sodium soy sauce
  • 3 tbsp gochujang (Korean chili paste)
  • 4 cloves garlic, minced
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Season the beef with salt and pepper. Select ‘Sauté’ on the Instant Pot, add oil, and brown the beef in batches.
  2. In a bowl, mix soy sauce, gochujang, brown sugar, minced garlic, and sesame oil. Pour over the browned beef.
  3. Close the lid and set to ‘Manual’ mode for 35 minutes on high pressure.
  4. While cooking, rinse jasmine rice under cold water and cook separately according to package instructions.
  5. Once done, let pressure release naturally for 10 minutes before venting any remaining steam. Fluff rice and serve topped with beef mixture.
