Italian Chicken, Mushrooms & Zucchini Skillet is a delightful one-pan meal that brings the flavors of Italy to your dining table.   • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups sliced zucchini (about 2 medium zucchinis)
  • 1 cup sliced baby bella or cremini mushrooms
  • 3 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by washing and slicing zucchini into half-moons and cleaning the mushrooms. Mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, and half of the Italian seasoning. Sear each side for 5–7 minutes until golden brown; remove from skillet and set aside.
  3. In the same skillet, add sliced zucchini and mushrooms along with minced garlic. Sauté for about 5 minutes until tender.
  4. Return chicken to the skillet, sprinkle with remaining Italian seasoning, and stir well.
  5. Cook on low heat for an additional couple of minutes to meld flavors. Adjust seasonings if necessary.
  6. Serve hot, garnished with a drizzle of olive oil or fresh herbs.
