  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook until browned on all sides (about 5–7 minutes). Remove from skillet.
  2. In the same skillet, add diced potatoes; season with salt and pepper. Cook until golden brown and tender (10–12 minutes), stirring occasionally.
  3. Add chopped onion and sliced bell peppers to the skillet. Stir frequently for about 5 minutes until softened.
  4. Slice the cooked sausages and return them to the skillet. Mix well.
  5. Add minced garlic during the last minute of cooking for extra flavor.
  6. Serve hot straight from the skillet or transfer to plates as desired.
