  • 1 cup white vinegar (5% acidity)
  • 1 cup filtered water
  • 2 tbsp kosher salt
  • 1 tbsp granulated sugar
  • 4 garlic cloves, peeled
  • 4 sprigs fresh dill
  • 1 tsp red pepper flakes (optional)

Instructions

  1. Wash the okra thoroughly under cold water and trim the stems.
  2. In a medium saucepan, combine water and vinegar. Add salt and sugar, stirring until dissolved over medium heat. Bring to a gentle boil and remove from heat.
  3. Pack clean glass jars tightly with okra, adding garlic cloves, dill sprigs, and red pepper flakes if desired.
  4. Pour the hot brine over the packed okra in each jar until fully submerged, leaving half an inch of headspace at the top.
  5. Seal with sterilized lids while still hot and let cool at room temperature before refrigerating.
