  • 1 whole chicken (45 pounds)
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp fresh rosemary (chopped)
  • 2 tbsp fresh thyme (chopped)
  • 1 lemon (cut into wedges)
  • 3 large carrots (cut into thick chunks)
  • 1 pound baby potatoes (halved)

Instructions

  1. Preheat oven to 425°F (220°C). Rinse the chicken under cold water and pat dry with paper towels.
  2. In a bowl, mix olive oil, salt, pepper, chopped herbs, and lemon juice. Rub this mixture all over the chicken.
  3. Stuff lemon wedges and leftover herb stems inside the cavity of the chicken.
  4. Toss carrots and potatoes in olive oil, salt, and pepper; place them around the chicken in the roasting pan.
  5. Roast for about 1 hour or until the internal temperature reaches 165°F (75°C). Baste halfway through cooking.
  6. Remove from oven and let rest for at least 10 minutes before carving.
