  • 1 cup cherry tomatoes (halved)

  • 1 ripe avocado (diced)

  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp honey or agave syrup

Instructions

  1. Wash all produce thoroughly. Chop mixed greens into bite-sized pieces and place them in a large bowl.
  2. Halve cherry tomatoes and slice cucumber; add to the bowl of greens.
  3. Dice mango or pineapple into small chunks and toss them into the salad.
  4. Slice the avocado in half, remove the pit, scoop out the flesh, cut it into cubes, and gently fold into the salad.
  5. In a small bowl, whisk together olive oil, lemon juice, and honey until well combined.
  6. Drizzle dressing over the salad just before serving and toss gently.
