  • 4 boneless, skinless chicken breasts (680g)
  • 3 cloves fresh garlic, minced
  • 3 tbsp extra virgin olive oil
  • Juice of 2 fresh lemons
  • 1 cup cherry tomatoes, halved (150g)
  • 2 medium zucchini, sliced into half-moons (300g)
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate chicken for at least 30 minutes.
  3. While marinating, chop cherry tomatoes and zucchini.
  4. Place marinated chicken in the baking dish; surround with chopped vegetables. Drizzle remaining marinade over everything.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C). Broil for a few minutes for golden edges if desired.
  6. Serve warm with juices drizzled on top.
