  • 1 medium onion (about 150g), finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable or chicken broth (960ml)
  • 1/2 cup heavy cream (120ml)
  • 4 strips cooked bacon, crumbled
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot over medium heat, cook crumbled bacon until crispy; remove and set aside.
  2. In the same pot, sauté chopped onion in bacon drippings for about 5 minutes until translucent. Add minced garlic and cook for an additional minute.
  3. Add diced potatoes and pour in the broth; bring to a boil, then reduce heat and simmer for 15-20 minutes until tender.
  4. Use an immersion blender to puree the soup to your desired consistency (or blend in batches).
  5. Stir in heavy cream; season with salt and pepper. Serve hot, topped with crispy bacon bits and fresh herbs.
