Ingredients

Scale
  • 1 lb lean ground beef
  • 4 medium Russet potatoes, peeled and thinly sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups sharp cheddar cheese, shredded
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme or oregano

Instructions

  1. Preheat oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary, then add onions and garlic during the last few minutes of cooking.
  3. Layer half of the potato slices at the bottom of the baking dish. Top with half of the cooked beef mixture and sprinkle with herbs. Repeat with remaining potatoes and beef.
  4. Sprinkle cheddar cheese generously over the final layer.
  5. Cover with aluminum foil and bake for about 45 minutes. Remove foil in the last 10 minutes to allow cheese to turn golden brown.
