  • 2 cups water or vegetable broth
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup sharp cheddar cheese, shredded
  • 2 large eggs
  • 1/2 cup panko breadcrumbs
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Rinse quinoa under cold water. Combine with water or broth in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until fluffy.
  2. While quinoa cooks, chop broccoli into small pieces and steam or microwave until tender (about 3 minutes).
  3. In a bowl, mix cooked quinoa and broccoli with cheddar cheese, eggs, panko breadcrumbs, garlic powder, salt, and pepper.
  4. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Form mixture into small balls (about 2 tablespoons each) and place on the sheet.
  5. Drizzle lightly with olive oil. Bake for 20-25 minutes until golden brown.
