  • 2 tablespoons fresh ginger, grated
  • 1/3 cup granulated sugar (adjust to taste)
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C). In a bowl, mix flour and salt. Cut in the cold butter until crumbly.
  2. Gradually add ice-cold water until the dough holds together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Toss sliced pears with ginger, sugar, cinnamon, and lemon juice in another bowl. Let sit while rolling out the dough.
  4. Roll chilled dough into a rough circle on a floured surface (about 12 inches). Transfer to parchment paper on a baking sheet.
  5. Pile pear mixture in the center, leaving a 2-inch border. Fold edges over filling slightly.
  6. Brush edges with an egg wash for golden color and sprinkle with sugar if desired. Bake for 40-45 minutes until golden brown.
