Instructions

  1. Preheat oven to 325°F (165°C). Rinse and pat dry the turkey. Remove giblets.
  2. In a skillet over medium heat, melt butter. Sauté onions and celery until soft (about 5 minutes). Add chestnuts, salt, pepper, thyme, and rosemary; stir in bread cubes until well combined.
  3. Stuff the turkey cavity with the mixture without packing it too tightly.
  4. Place the turkey breast-side up on a roasting rack in a pan. Cover loosely with aluminum foil. Roast for about 13-15 minutes per pound.
  5. Baste every 30 minutes after two hours for golden skin.
  6. Check doneness when internal temperature reaches at least 165°F (75°C). Let rest before carving.
