Ingredients

Scale
  • 4 cups fresh broccoli florets
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Prepare your veggies: Wash and chop broccoli into bite-sized pieces. Dice onion and mince garlic.
  2. Sauté aromatics: In a large pot over medium heat, add 1 tablespoon olive oil. Sauté the onion until translucent (about 5 minutes), then add garlic and cook until fragrant.
  3. Add broccoli: Stir in chopped broccoli and vegetable broth. Simmer for about 10 minutes until broccoli is tender but bright green.
  4. Blend: Use an immersion blender to puree the mixture until smooth (or blend in batches). For desired texture, pulse gently if you want some chunks of broccoli.
  5. Make it creamy: Stir in heavy cream and most of the shredded cheddar cheese over low heat until melted and creamy.
  6. Season & serve: Taste and season with salt and pepper as needed. Serve hot, topped with remaining cheese.
