Cooking Steps

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
  • Add the boneless chicken thighs to the pot. Season with salt and pepper, then sear them until they turn golden brown, around 5-7 minutes.
  • Stir in the minced garlic, carrots, and celery. Cook for about 3-4 minutes until the vegetables soften a bit.
  • Pour in the chicken broth, making sure you scrape the bottom of the pot. Bring everything to a boil, then reduce the heat and let it simmer for 20 minutes.
  • In a bowl, mix together the flour, baking powder, salt, and pepper. In another bowl, combine the milk with melted butter, then pour this into the dry ingredients, mixing until just combined.
  • Spoon dollops of your dumpling dough into the simmering broth. Cover the pot and let them cook undisturbed for 15-20 minutes.
  • Just before serving, stir in the chopped parsley and lemon juice to add a fresh zing to your dish.
