  • 2 cups cooked chickpeas soaked overnight for better texture
  • 1 onion finely chopped
  • 1/4 cup fresh herbs parsley, cilantro, or dill
  • 2 cloves garlic fresh, minced
  • 1 teaspoon smoked paprika or regular paprika
  • 1 teaspoon cumin essential for traditional flavor
  • 1/2 cup flour chickpea flour works for gluten-free
  • 2 tablespoons olive oil for brushing

Optional Additions

  • 1 teaspoon lemon zest for added brightness
  • 1/2 teaspoon cayenne pepper for a spicy kick

Method

  • Preheat the oven to 400°F (200°C).
  • Blend together the soaked chickpeas, chopped onion, garlic, fresh herbs, and spices in a food processor until just combined.
  • Incorporate the flour gradually, mixing until the mixture holds together but isn’t sticky.
  • Shape the mixture into patties and place them on a parchment-lined baking sheet.
  • Brush each patty lightly with olive oil to achieve a crispy exterior.
  • Bake for 20 minutes, flipping halfway through, until golden brown and crispy.
  • Serve warm with tahini sauce, in pita, or atop a salad.

Notes

Garnish with freshly chopped parsley for added flavor and visual appeal.
