  • 2 pounds Baby Potatoes or fingerling or small Yukon Gold potatoes
  • 4 tablespoons Olive Oil extra virgin preferred
  • To taste Salt
  • To taste Black Pepper

For the Flavor

  • 2 teaspoons Dried Oregano or fresh oregano adjusted to taste
  • 1 teaspoon Garlic Powder or 2-3 cloves fresh minced garlic
  • 1 each Lemon Zest & Juice essential for a zesty kick

For the Topping

  • 1 cup Feta Cheese or substitute with goat cheese
  • 1/4 cup Fresh Parsley for garnish

How to Make Greek Feta Roast Potatoes

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, combine halved or quartered baby potatoes with olive oil, dried oregano, garlic powder, salt, and pepper. Toss until evenly coated.
  • Spread the seasoned potatoes in a single layer on a baking tray.
  • Roast for about 30–35 minutes, turning halfway through, until golden brown and fork-tender.
  • Scatter crumbled feta cheese over the hot potatoes and return to the oven for an additional 5–10 minutes.
  • Drizzle fresh lemon juice over the potatoes and sprinkle with lemon zest.
  • Garnish with chopped parsley just before serving.

Notes

Optional: Serve with a slice of lemon for extra zing.
