Ingredients
  

For the Slaw

  • 1 medium Fennel sliced
  • 2 medium Green Apples diced
  • 2 cups Cabbage shredded

For the Dressing

  • 1/2 cup Vegan Mayonnaise
  • 2 tablespoons Lemon Juice fresh
  • 1/4 cup Mint chopped
  • 1/4 cup Parsley chopped

For the Garnish

  • 1/4 cup Pecans chopped

Preparation

  • In a large bowl, mix the sliced fennel and diced green apples. Drizzle with fresh lemon juice, tossing gently to combine and prevent browning.
  • In a small food processor, blend the chopped mint and parsley with the vegan mayonnaise until smooth. Season with salt and pepper, and give it another quick blend.
  • Add the shredded cabbage and half of the pecans to the fennel-apple mixture. Pour in the creamy green mayonnaise dressing and toss until everything is coated evenly.
  • Sprinkle the remaining pecans and fresh mint leaves on top. Serve immediately for the best texture, or let it sit for 10 minutes to meld the flavors.

Notes

Store in an airtight container in the refrigerator for up to 2 days. Keep pecans separate until just before serving to maintain their crunch.
