For the Soup Base

  • 4 cups Vegetable Broth or Chicken Broth
  • 3 medium Potatoes Russet or Yukon Gold, diced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Dill Pickles chopped
  • 1 tablespoon Salt to taste
  • 1 teaspoon Black Pepper to taste

For the Creaminess

  • 1 cup Sour Cream or Greek yogurt

For the Fresh Taste

  • 2 tablespoons Fresh Dill chopped

Cooking Instructions

  • Sauté the onions and garlic in your Instant Pot using the sauté function until softened, about 3-5 minutes.
  • Add the potatoes and broth to the pot, stir well, then secure the lid and set the Instant Pot on high pressure for 10 minutes.
  • After cooking, allow for a natural pressure release for 5 minutes, then stir in the dill pickles and fresh dill.
  • Simmer on sauté for another 5 minutes to meld the flavors together.
  • Turn off the Instant Pot and gently stir in the sour cream until fully combined.
  • Season with salt and pepper to taste, then serve warm, garnished with additional fresh dill if desired.

Notes

Optional: Drizzle with olive oil for a touch of richness. For freezing, consider leaving out the sour cream and adding it fresh upon reheating.
