Ingredients
  

For the Terrine

  • 2 medium Beets Roasted or boiled
  • 8 ounces Goat's Cheese Fresh variety preferred
  • 1/2 cup Greek Yogurt Or sour cream
  • 1 tablespoon Lemon Juice Freshly squeezed
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive Oil

Optional Garnishes

  • 1 tablespoon Fresh Dill or Thyme For flavor
  • 1/4 cup Crushed Walnuts For texture
  • to taste Honey Drizzle For sweetness
  • 1 handful Microgreens For garnish

Instructions
 

Preparation

  • Prepare the Beets by roasting at 400°F for about an hour or boiling for 30-40 minutes until tender, then cool and peel.
  • Slice the cooled beets into thin pieces, about ⅛ inch thick.
  • Blend goat cheese, Greek yogurt, lemon juice, salt, and pepper until smooth and creamy.
  • Line a loaf pan with parchment paper and layer cheese mixture and beet slices alternately.
  • Cover the terrine, place a weight on top, and chill in the refrigerator for at least 2 hours.
  • After chilling, lift out of the pan using parchment paper, slice, and serve with optional garnishes.

Notes

For best results, refrigerate fully and garnish before serving to enhance presentation.
