Ingredients
  

For the Pasta

  • 200 grams Pasta (Spaghetti or Linguine) or fettuccine or penne if preferred

For the Scallops

  • 300 grams Fresh Scallops plump and translucent

For the Sauce

  • 4 cloves Garlic minced
  • 2 tablespoons Olive Oil extra virgin
  • 2 tablespoons Lemon Juice freshly squeezed

For the Garnish

  • 2 tablespoons Fresh Herbs (e.g., Parsley) chopped

Cooking Steps

  • Bring a pot of salted water to a boil. Add your choice of pasta and cook until al dente (about 8-10 minutes). Save a cup of the pasta water before draining.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  • Pat the scallops dry using a paper towel, season with salt and pepper, then sear for 2-3 minutes on each side.
  • Add the drained pasta to the skillet with the scallops. Pour in the fresh lemon juice and a splash of the reserved pasta water.
  • Stir in freshly chopped herbs and serve hot, garnished with more herbs.

Notes

Optional: Garnish with finely grated Parmesan for added flavor.
