Cooking Steps

  • Heat oil in a large Dutch oven and add the bacon pieces. Sauté until crispy, then remove and set aside.
  • Season your chuck roast with salt and pepper. In batches, brown the beef cubes in the same Dutch oven for 1-2 minutes on all sides.
  • Reduce the heat and add the onions to the pot, stirring until browned. Add the minced garlic and let it cook until fragrant.
  • Sprinkle in the flour and tomato paste, stirring well. Cook for about 2 minutes until it darkens.
  • Pour in the beef broth, Worcestershire sauce, brown sugar, and thyme. Return the browned beef and bacon to the pot.
  • Bring the stew to a boil, then reduce the heat, cover, and let it simmer for 1 hour.
  • After an hour, toss in the carrots and potatoes, cover, and continue cooking for another hour.
  • Adjust the stew’s thickness as desired before serving. Garnish with fresh parsley.
