Preparation

  • Start by thinly slicing the mushrooms and onion. Toss them in a bowl with olive oil, salt, and pepper until evenly coated, bringing out their rich flavors.
  • Spread the seasoned vegetables on a baking sheet and roast them in a preheated oven at 400°F for 20-25 minutes until golden brown and caramelized.
  • Generously butter one side of each slice of bread.
  • Layer a slice of Gouda cheese, the roasted mushrooms, and the caramelized onions between the unbuttered sides of the bread.
  • Heat a skillet over medium heat and grill the sandwiches until golden brown and the cheese melts, about 3-4 minutes per side.
