  • 1 tablespoon sugar adjust according to taste

How to Make Blueberry Compote Crepe Roll-Ups

  • In a mixing bowl, whisk together flour, eggs, milk, sugar, and melted butter until smooth and free of lumps. Let it rest for about 30 minutes.
  • Heat a non-stick skillet over medium-high heat and lightly brush with oil or butter.
  • Pour a small amount of batter into the pan, swirling it to coat the base evenly, and cook for 1-2 minutes until the edges become light brown; gently flip and cook for another minute.
  • In a saucepan, combine blueberries, lemon juice, and sugar. Cook over medium heat for 5-7 minutes until the blueberries burst and the mixture thickens.
  • Remove from heat and let the compote cool slightly before filling the crepes.
  • Place a few spoonfuls of the blueberry compote onto each crepe, roll them up tightly, and arrange on a serving platter.
  • Dust with powdered sugar, add whipped cream, or sprinkle mint leaves before serving.
