How to Make Cardamom Spiced Rice Pudding

  • Rinse Arborio rice under cold water until the water runs clear, about 1-2 minutes.
  • In a medium saucepan, mix the rinsed rice, milk, sugar, and a pinch of salt. Stir gently.
  • Place the saucepan over medium-low heat and cook, stirring occasionally until simmering, about 5-10 minutes.
  • Lower the heat and continue to cook, stirring frequently for 25-30 minutes until pudding thickens.
  • Remove from heat. Stir in vanilla extract and cardamom, adjusting sweetness to taste.
  • Serve warm or chill in the fridge. Garnish with cinnamon or fresh fruits.
