For the Brownies

  • 1 box Fudge Brownie Mix Use a high-quality mix or homemade recipe
  • 2 large Eggs At room temperature for better mixing
  • 1/2 cup Vegetable Oil Can substitute with melted butter

For the Layers

  • 15 cookies Mint Oreo Cookies Regular Oreos and peppermint extract can be used
  • 1 cup Andes Mint Candies Or use Andes Mint Baking Chips for convenience

For the Topping

  • 5 cookies Chopped Mint Oreos Use remaining Oreos after layering
  • 1 scoop Vanilla Ice Cream Optional, for serving

Instructions

  • Preheat your oven to 350°F (175°C) and prepare a 9-inch square baking pan.
  • In a large mixing bowl, prepare the brownie batter according to the package instructions and mix well.
  • Layer whole Mint Oreo cookies in a single layer at the bottom of the prepared pan.
  • Pour the brownie batter evenly over the Mint Oreos, spreading gently.
  • Bake for 30-35 minutes until a toothpick inserted comes out with moist crumbs.
  • Sprinkle Andes Mints on top and return to the oven for 1-2 minutes until soft.
  • Spread the melted Andes Mints into a smooth layer and sprinkle with chopped Mint Oreos.
  • Let the brownies cool completely for about 1 hour before slicing into squares.

Notes

Serve warm with a scoop of vanilla ice cream for an extra treat. Store brownies in an airtight container.
