Preparation

  • Clean the mussels under cold water, scrubbing them to remove any grit. Make sure to remove any beards and only use live mussels that are tightly closed.
  • In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallots, sautéing until soft and fragrant, about 3 minutes.
  • Pour in the dry white wine and allow it to bubble for 5 minutes.
  • Stir in the chicken or vegetable broth, seasoning with salt and pepper to taste. Bring the mixture to a gentle simmer.
  • Add the cleaned mussels to the pot, cover, and steam them for 5–7 minutes until they open.
  • Ladle the delicious stew into bowls, garnish with fresh parsley, and serve with crusty bread for dipping. Optional: A splash of lemon juice enhances the dish’s brightness.
