Ingredients
  

For the Soup Base

  • 4 large Yellow Onions Use sweet Vidalia onions for extra flavor.
  • 2 tablespoons Butter Can swap with olive oil for a dairy-free option.
  • 2 tablespoons Olive Oil Can replace with more butter or a neutral oil.
  • 4 cloves Garlic Fresh is ideal, but jarred works in a pinch.
  • 1 tablespoon Fresh Thyme Dried thyme can be used as a substitute.
  • 6 cups Vegetable Broth Beef broth can be used for extra heartiness.

For the Gnocchi

  • 2 cups Potato Gnocchi Gluten-free gnocchi works beautifully.

For the Toppings

  • 1 cup Toasted Baguette Slices Substitute with gluten-free bread if needed.
  • 1 cup Gruyere Cheese Can use Swiss cheese or a vegan melt.
  • 2 tablespoons Fresh Parsley or Thyme For garnish.

Instructions
 

Preparation

  • Thinly slice the yellow onions and place them in the slow cooker. Add butter and olive oil.
  • Toss in minced garlic and fresh thyme. Stir to infuse the flavors into the onions.
  • Add the vegetable broth. Ensure everything is submerged, cover, and set on low for 6-8 hours.
  • About 30 minutes before serving, prepare the gnocchi according to the package instructions.
  • Once the soup is done cooking, stir in the gnocchi to coat in the broth.
  • Ladle the soup into oven-safe bowls, top with baguette slices and Gruyere, then broil for 3-5 minutes until bubbly.
  • Remove from the oven, garnish with herbs, and serve warm.

Notes

Optional: Drizzle with truffle oil for extra flavor.
