Instructions
Preparation
Thinly slice the yellow onions and place them in the slow cooker. Add butter and olive oil.
Toss in minced garlic and fresh thyme. Stir to infuse the flavors into the onions.
Add the vegetable broth. Ensure everything is submerged, cover, and set on low for 6-8 hours.
About 30 minutes before serving, prepare the gnocchi according to the package instructions.
Once the soup is done cooking, stir in the gnocchi to coat in the broth.
Ladle the soup into oven-safe bowls, top with baguette slices and Gruyere, then broil for 3-5 minutes until bubbly.
Remove from the oven, garnish with herbs, and serve warm.
Notes
