  • 4 cups fresh spinach leaves baby spinach recommended
  • 3 cloves garlic finely minced
  • 2 tablespoons extra virgin olive oil for sautéing
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1/4 teaspoon nutmeg optional

For Garnish

  • 1/4 cup grated Parmesan cheese omit for dairy-free

How to Make Spinach Garlic Rice Bowl

  • Rinse the rice under cold water until the water runs clear.
  • Cook the rice in a saucepan with vegetable broth, bringing to a boil then simmering for 18-20 minutes.
  • Stir in the heavy cream gently after the rice is cooked.
  • Sauté garlic in olive oil over medium heat for about 1 minute until fragrant.
  • Add spinach in batches, tossing gently until wilted for about 2-3 minutes.
  • Season spinach with salt, black pepper, and nutmeg, and toss to combine.
  • Serve the creamy rice topped with sautéed spinach and garnish with Parmesan cheese.
