How to Make Garlic Butter Lemon Salmon

  • Preheat the oven to 425°F (220°C).
  • Toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated. Spread them in a single layer on a baking sheet.
  • Place the baking sheet in the oven and roast the potatoes for 20 minutes, until they are lightly golden and starting to crisp.
  • While the potatoes roast, toss the broccoli florets with olive oil, salt, and pepper. After 20 minutes, add the broccoli to the baking sheet alongside the potatoes.
  • Roast the potatoes and broccoli together for an additional 15-20 minutes, until the potatoes are crispy and the broccoli is tender and vibrant.
  • In a skillet on medium heat, melt the unsalted butter. Add the minced garlic, followed by lemon juice, salt, and pepper, stirring until bubbly and fragrant.
  • Place salmon fillets skin-side down in the skillet with the lemon butter sauce. Cook for about 4-5 minutes, then flip and cook for another 3-4 minutes, or until the salmon reaches an internal temperature of 145°F.
