For the Base

  • 2 tablespoons Olive Oil Good quality extra virgin recommended
  • 2 medium Shallots Finely chopped
  • 2 cloves Garlic Minced
  • 1 teaspoon Sweet Smoked Spanish Paprika

For the Sauce

  • 1 can Canned Diced Tomatoes Opt for low-sodium
  • 1 cup Vegetable Broth Or seafood broth for better flavor
  • 1 cup Greek Yogurt Let sit at room temperature

For the Pasta

  • 8 ounces Uncooked Penne Pasta Any short pasta can be used
  • 1 can Canned Tuna in Olive Oil Well-drained

To Finish

  • 2 tablespoons Fresh Parsley Chopped
  • to taste Sea Salt
  • to taste Black Pepper Freshly ground

Directions

  • Heat olive oil: Pour a generous splash of olive oil into a large nonstick pan over medium heat. Let it warm up, releasing its rich aroma, about 1-2 minutes.
  • Sauté shallots and garlic: Add finely chopped shallots and minced garlic to the pan, stirring occasionally until they become soft and fragrant, approximately 2 minutes.
  • Add paprika: Sprinkle in the sweet smoked Spanish paprika, stirring for about 30 seconds.
  • Incorporate diced tomatoes: Pour in the canned diced tomatoes, then season with sea salt and black pepper. Let it simmer for 3 minutes.
  • Add broth and pasta: Pour vegetable broth into the pan and bring to a boil. Add uncooked penne pasta and stir well.
  • Cook pasta: Cook uncovered for about 9 minutes, stirring occasionally. Once the pasta is nearly al dente, cover the pan and reduce the heat for another 3-4 minutes.
  • Mix in tuna and yogurt: Remove from heat and gently fold in the drained canned tuna, Greek yogurt, and chopped parsley.
  • Serve: Dish up your Simple Tuna Pasta and garnish with additional parsley.

Notes

Optional: Serve with a sprinkle of red pepper flakes for a touch of heat. Allow Greek yogurt to sit at room temperature to avoid curdling.
