Ingredients
  

For the Cabbage

  • 1 head Cabbage green or savoy preferred
  • 2 tablespoons Olive Oil or avocado oil as substitute
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black Pepper freshly cracked recommended
  • 2 teaspoons Za’atar Middle Eastern spice blend

For the Yogurt Sauce

  • 1 cup Vegan Yogurt or regular Greek yogurt
  • 2 tablespoons Whole Grain Mustard or Dijon mustard as swap
  • 2 tablespoons Lemon Juice freshly squeezed
  • 2 cloves Minced Garlic or roasted garlic as alternative
  • 1 teaspoon Chili Oil omit for milder flavor

Instructions
 

Preparation

  • Preheat the oven to 200°C (400°F).
  • Slice the cabbage into six wedges.
  • Mix olive oil, salt, black pepper, and za’atar in a bowl. Brush mixture over both sides of each cabbage wedge.
  • Place the wedges on a lined baking sheet and roast for about 40 minutes.
  • Prepare the yogurt sauce by whisking together the vegan yogurt, mustard, lemon juice, garlic, olive oil, and a pinch of salt.
  • Spread the yogurt sauce on a serving platter and place the roasted cabbage wedges on top.
  • Garnish with fresh parsley and additional za’atar, drizzle with chili oil if desired.

Notes

For added brightness, serve with a squeeze of fresh lemon juice.
