Ingredients
  

For the Chicken

  • 2 pieces Chicken Breasts skinless
  • 2 tbsp Olive Oil or any neutral oil
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika or regular paprika
  • to taste Salt
  • to taste Black Pepper

For the Salad

  • 2 cups Green Cabbage shredded
  • 1 cup Cucumber diced
  • 1 bunch Green Onions chopped
  • 1/4 cup Chives chopped
  • 1/4 cup Parsley chopped
  • 1/4 cup Basil chopped
  • 2 cups Spinach fresh
  • 1 piece Avocado diced, use just before serving
  • 1/2 cup Feta Cheese crumbled

For the Dressing

  • 1/2 cup Greek Yogurt or dairy-free yogurt
  • 1/4 cup Mayonnaise or dairy-free alternative
  • 2 tbsp Lemon Juice

For the Wraps

  • 4 pieces Whole Wheat or Gluten-Free Wraps ensure gluten-free wraps are certified

Instructions
 

Preparation Steps

  • Preheat your grill or grill pan to a medium-high heat.
  • Coat the chicken breasts with olive oil, garlic powder, smoked paprika, salt, and black pepper. Grill for 4-5 minutes on each side until fully cooked.
  • Let the chicken rest for 5 minutes, then slice thinly.
  • In a large bowl, combine shredded cabbage, diced cucumber, chopped green onions, chives, parsley, basil, spinach, and tarragon.
  • Gently fold in diced avocado and crumbled feta.
  • In a small bowl, whisk together Greek yogurt, mayonnaise, olive oil, lemon juice, parsley, basil, chives, and minced garlic.
  • Drizzle the dressing over the salad mixture and toss until well-coated.
  • Warm the wraps slightly in a pan or microwave.
  • Layer sliced grilled chicken and salad onto each wrap, then roll tightly.
  • Cut wraps in half if desired and serve with fresh herbs or lemon wedges.
