How to Make Natural Energy Snack Balls

  • Start by blitzing the whole raw almonds in a food processor until they are mostly fine but still retain a little crunch for texture. This process should only take about 1-2 minutes.
  • Add the Medjool dates, desiccated coconut, olive oil, ground cinnamon, ground clove, honey (if using), and flaky sea salt to the food processor. Pulse until everything comes together into a cohesive mixture, aiming for about 30 seconds.
  • If the mixture seems too dry or crumbly, don't hesitate to add a splash more olive oil and blend again until well combined.
  • Using a cookie scoop or tablespoon, portion the mixture out, then roll them into delightful balls with your hands.
  • For added texture and flavor, roll each ball in some additional coconut or finely chopped almonds until fully coated.
  • Place the formed energy balls in the freezer for about 30 minutes to let them set firm.
  • Once set, store your energy balls in a sealed container. They can be kept in the fridge for up to a week or frozen for up to three months.
